Ingredients:
- 8 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 4 Al Gharb Gourmet sausage
- 1 small onion, diced
- 1 bell pepper (any color), diced
- 1 zucchini, diced
- 1 cup broccoli florets, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
- Fresh herbs for garnish (optional)
Instructions:
1. Preheat your oven to 375°F (190°C)
2. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.
3. Heat olive oil in a large oven-safe skillet over medium heat. Add the diced sausage and cook until browned.
4. Add diced onion, bell pepper, zucchini, and broccoli to the skillet. Sauté the vegetables until they are softened, about 5-7 minutes.
5. Pour the egg mixture over the sausage and vegetables in the skillet. Allow it to cook undisturbed for a couple of minutes until the edges start to set.
6. Gently lift the edges of the frittata with a spatula, allowing the uncooked eggs to flow underneath. Continue this process until most of the egg is set but the top is still slightly runny.
7. Sprinkle the cherry tomatoes and shredded cheese evenly over the top of the frittata.
8. Transfer the skillet to the preheated oven and bake for about 12-15 minutes, or until the frittata is set in the middle and the cheese is melted and bubbly.
9. Carefully remove the skillet from the oven (remember the handle will be hot). Allow the frittata to cool for a few minutes before slicing.
